This is a masterpiece of daiginjo sake brewing, produced using the best of our technology in the manufacturing process, including carefully polishing high-quality Yamada Nishiki rice from Hyogo Prefecture at our own rice mill, washing and soaking (water absorption) done in seconds, making koji with careful temperature control, long-term mash brewing at low temperature, and low-temperature aging after bottling. It is a daiginjo sake with a soft aroma and a smooth, crisp taste.
