Fukumitsuya founded in 1625, is the oldest sake brewery in Kanazawa. In 2001, it became a junmai-gura, which makes its sake with only rice and water. Kagatobi Junmai Daiginjo Gokujyou Gensyu is a genshu (undiluted sake) of junmai daiginjo that was prepared using traditional techniques with attention to details. It has a fragrant aroma and rich flavor that expands in one's mouth.

The fruity ginjo fragrance and the refined, rich flavor of genshu (undiluted sake) match well with deep-fried oysters with hints of citrus served with tartar sauce, white fish carpaccio, and seafood hot pot with ponzu dipping sauce.
